A special malvazija
Hand-picked from the beautifully situated vineyards of the Santomas Winery high above the coastal town of Koper, the grapes are refrigerated after harvest to avoid oxidation. Only the healthy and best grapes are pressed and cold macerated for an hour. The clarified must is then fermented to a large extent in steel tanks and around 10% in used French oak barrels. It matures for four months on the lees or with the addition of sulphur.
In the glass a radiant bright golden yellow. Floral aromas of white and yellow flowers, tropical fruits and pome fruit on the nose. Very engaging and intense in the mouth, not too strong, combined with a pleasant freshness and fruity notes. At the end of the Malvazija typical slightly nutty appeal.
A very pleasant balance of fullness and freshness characterize the Malvazija from the Santomas winery.
