Santomas Conte del Monte Extra Brut 2021 Rose

A superb rosé sparkling wine made from the Refosco grape – Extra Brut Rose

The Refosco grapes for the Santomas Conte del Monte are harvested early. The vineyards of the Santomas winery stretch high above Koper in Slovenian Istria. After the alcoholic fermentation, the wine matures on the yeast in a large 3000-litre oak barrel for a year, without the addition of sulphur.

This is followed by a classic bottle fermentation of 15 months. The yeast remains in the bottle, keeping it alive for a long time and giving the sparkling wine a slight natural cloudiness.

In the glass, a bright salmon pink reveals the Refosk grape variety. On the nose, the Santomas Conte del Monte is wonderfully complex. We detect raspberry, pomegranate, black olives and a slight hint of yeast. This continues on the palate, combined with the aroma of a warm bread crust that we love so much in sparkling wines of this class. Rounded off by the fresh acidity of the Refosk.
