A great Merlot from the Karst
Naturalness on extreme terrain. A very low vine yield (only 3500 to 4000 kg/ha) and the focus on environmentally friendly viticulture create a very unique genre of wine in the Karst.
As with all wines from the Cotar winery, the Merlot fermentation occurs spontaneously without the addition of selected yeasts. Without adding sulfur, the wine is left on its lees until the first racking. This results in extraordinarily low sulfur values. It is also unfiltered.
Although the Karst region is known for wines with a distinctive acid structure, Merlot shows its soft and juicy side. Ripe red berries, herbs, plums and something fleshy and fatty give Cotar's Merlot great complexity. The tannins are not too prominent and round off the long finish pleasantly.
By the way: Cotar wines impress with their enormous shelf life, as the wines go into the bottle alive and unfiltered. Enjoy it now or in 15 years. He will bring joy.
