Zelen is an indigenous white wine variety from Slovenia and is very popular in the Vipava Valley. ‘Zelen’ translates as ‘green’ in German.

For the Burja Zelen, Primoz Lavrencic uses vines aged between 5 and 10 years. In the current vintage, the grape juice was left in contact with the skins for 2 days before undergoing 7 months’ maturation in stainless steel tanks. This process gives the Zelen a character all of its own. Its colour is a brilliant gold.

As soon as we pour it into the glass, fresh citrus notes immediately come to the fore: grapefruit, green apple and floral aromas. The first impression continues on the palate, with lemon, grapefruit and bell pepper. There are light herbal notes and a unique saltiness, the sort we’re more accustomed to finding in wines from more Mediterranean regions.

On the palate, it is perfectly dry, with a balanced buttery quality and a distinct minerality. The Burja Zelen – a complex, exciting and biodynamically produced white wine of the highest quality from Slovenia.
